This caramelised onion and green herb galette with chermoula and feta was a complete fridge-raid impromptu lunch. I had some pastry trimmings left from cherry pie testing, and the rest was in my fridge which I was organising for the week ahead. Not much of a recipe, but here’s what I did: caramelised some onions until golden, soft and sweet and added ground cumin, spinach, dill, parsley, spring onion and cooked for a couple minutes more until wilted down. Added finely chopped preserved lemon and chermoula paste (a North African spice paste), seasoned to taste and cooked for a minute more. Left it to cool, before spreading it onto my rolled out pastry circle, topped with crumbled feta and crimped the edges. Sliced potatoes on a mandolin and arranged them on top. Brushed with olive oil and butter (+ flaked sea salt and pepper) and baked at 200c for 20mins, turned oven down to 180c and baked for another 20-25 mins. Also made a quick dressing to drizzle on top comprising of more chermoula paste, lemon juice, olive oil and salt and pepper. @noorishbynoor: I must have been channeling my inner you when I made this – the flavours of this so remind me of your cooking!!
